Dégustation [noun or verb, from Latin degustare to taste] is a careful, appreciative tasting of a range of dishes focusing on the senses, culinary art and good company.
Prepare thyself for foodie heaven as Chef Annie Irving presents a one of a kind menu that mixes up a little from the sea, a little from the garden and a little from the land. Each course is perfectly matched with Bress Wines and Ciders to take you on a journey of flavours and textures that will delight and surprise.
Relax in our courtyard overlooking the historic township of Castlemaine and watch the sun set as you enjoy an amuse bouche of Oyster Shooters with Champagne Jelly and Soused Cucumber served with a glass of chilled Bress NV Sparkling Blanc.
As night closes in, the party moves inside the 150-year-old Castlemaine Gaol where a further five courses are presented, each highlighting the best regional produce Central Victoria farmers have to offer.
